Cocktails and Appetizers at Cafe Pacifica


What goes great with a warm, summer day in Vancouver? Well, that would have to be having cocktails with friends at a outdoor terrace.
That’s exactly what we did when we invited Vancouver Sun’s Jane Mundy, Vancouver Courier’s Sandra Thomas, Fairchild Radio’s Condrea Fung and writers Ursula Maxwell-Lewis,Janice and George MucalovJoanne Blain and Cassandra Anderton (not pictured) to join General Director Craig Norris-Jones, Executive Assistant Kathryn Poole and PR Manager Laurie Cooper in sampling appies and cocktails at Cafe Pacifica.
What made these drinks extra special were that they were from our Vancouver-themed menu.
Feeling a little “East Vancouver” today? Order a refreshing Sakura Sour, made of Tanqueray Rangpur, sake, cherry herring, fresh lemon juice and suius cherry bitters.
Or maybe you’re in the mood for something more “North Vancouver”? How about the Evergreen cocktail made of Don Julio Blanco, Chartreuse, juniper berries, pine syrup, lime juice and soda?
Perhaps the Bloody Alley, made of Bulleit Bourbon, Peychaud’s bitters and blood orange syrup, from our “Chinatown” menu is more up your alley?
Or maybe a liquid concoction of Crown Royal Cask No. 16, basil, red grapes and soda that makes up the Canadese from our “Commercial Drive” menu?
When asked what the group’s favourite cocktail was, everyone agreed that the Kale Gimlet was the hands down winner. This Kitsilano themed cocktail is made of Tanqueray No. TEN and Grand Marnier with fresh squeezed kale, pineapple and lime juices.

Staff Spotlight: Edd Wright + Dolores Scott, Performers


Welcome to our new blog series: Staff Spotlight. This is where you’ll meet the people who make it happen! With over 400 associates working at Pan Pacific Vancouver, there are a lot of personalities and a lot of stories to tell!
Today we shine the spotlight on entertainers Edd Wright and Dolores Scott. The opera-singing duo are one of our long-time fixtures at Opera Buffet, which takes place at the Cafe Pacifica every Saturday evenings. While guests are dining on delicious Italian fare, they’re performing classic opera arias. It’s a feast for all the senses!
Tell us a little bit about yourself.
Ed – My singing career started in a children’s choir that was seconded for the Vancouver Opera’s first production of Carmen. Sang with them for 17 years in the chorus and performed many comprimario roles. I also do a bit of acting. I’ve performed in operas, musical theatre productions with The Arts Club, Theatre Under the Stars, film and television. I feel fortunate that my work has taken me across Canada, to Europe and the US.
Dolores – I’m originally from the Philippines but grew up in Surrey. I have a Master’s in music/opera, and teach voice at my studio. I’ve toured as a soloist throughout Hungary and Germany. I’ve also had the honour of performing for Emperor Akihito and Empress Michiko of Japan with the Vancouver Chamber Choir.
How long have you been performing with Pan Pacific Vancouver?
Ed – Since 1998. That’s 17 years! I’m getting close t my 700th performance with the Pan Pacific.
Dolores – I’d say 10 years.
What’s your favourite part about your job?
Ed – Entertaining the audience and speaking with them before and after.
Dolores – I would say it’s between the people, the music and the food! But seriously, I love that people appreciate what I love to do.
Do you ever get nervous about performing?
Ed – At this point, I do not get very nervous, as I have done it for so long. Although there is always a bit of nervous tension, as you sing your best.
Dolores – Not so much any more. I have learned that everyone wishes you well when you get up there to sing. No one wants to hear you sing badly. (haha!)
What’s your favourite opera, composer or aria?
Ed – There are so many that I enjoy. If I had to pick one, I suppose it would be Aida by Verdi. My favourite composer is Puccini. And my favourite aria would be the one I’m singing at the moment.
Dolores – I’m very much in love with all opera, if it’s sung well. That is, with the sincerity of one’s soul. You can always tell if someone is “putting on” their expression. In any type of expression, sincerity is everything!
While singing, you may have been witness to some wonderful occasions. Any special moment you want to share with us while performing at Cafe Pacifica?
Ed – Over the years there have been many special moments. For instance, when people tell us that we’ve made their holidays and were the best part of it. I was told one evening that we a couple fall in love all over again. We’ve often moved people to tears of enjoyment which is very special for us.
Dolores – There have been moments when I have felt I have never sung better, but when a European guest and his daughter said I sang better than Netrebko, that took the cake. It was the most amusing moment of my life!
Do you ever get any song request from the crowds?
Ed – Seldom, but one of the most popular request would be something from The Phantom of the Opera (which we always do a couple of numbers from). We’re often been told that our choice of repertoire is exactly what guests wanted.
Dolores – Many people request ‘Un bel di’ from Madama Butterfly. I learned it for them, even though it’s a bigger role than I would normally sing.
Besides opera, what kinds of other music do you listen to? Do you sing anything other than opera? (if even just for yourself)
Ed – We perform many different kinds of music at the Pan. Not just opera. We sing Italian love songs and musical theatre numbers. I listen to a very eclectic range of music – from opera, to Billy Joel to the old standards from the 40s and 50s.
Dolores – I’m also a member of the Vancouver Chamber Choir, and I love choral music! VCC is musically exceptional and world renown. I also love jazz, theatre music and heavy metal.
What do you do for fun when not working at the Pan?
Ed – I enjoy going to the theatre. During the summer months, I go camping!
Dolores – I knit. I especially enjoy knitting socks. At the end of a full day of rehearsals, teaching, preparing and practicing for performances, I watch a murder mystery du jour on Netflix, and knit a sock in front of the fireplace.

Cruise and Stay with Pan Pacific Vancouver


What are repositioning cruises, you might wonder? It’s when cruise ships relocate from one region to another, either in the autumn and spring and usually from point A to point B. Spot the Cruise Ships


The great thing about summer and being situated at Canada Place is welcoming all the visiting cruise ships to Vancouver! Being a port city, we’re so fortunate to be ambassadors for visitors from all over the world.
At Canada Place, there are three berths where cruise ships can dock: Canada Place East, Canada Place North and Canada Place West. In the summer, it’s not unusual to see all three berths full!

The Ultimate Flying Ride with FlyOver Canada


Last month, the good folks over at FlyOver Canada invited some of the Pan Pacific staff to   their open house to check out the “ultimate flying ride.”
If you haven’t been yet, we do recommend this virtual flight of Canada.
The experience begins in the pre-show area, where an audio-visual show of  Canada  gets you introduced to our great country and excited for the virtual ride.
Then, you hit the flight deck, strap into your seat before taking off into the huge dome screen. (with feet dangling!) The latest in projection and ride technology will make you feel like you’re indeed soaring over the snow-capped Rocky Mountains and swooping over city vistas, and stunning landscapes, including scenic wheatfields and Niagara Falls. Staff Spotlight: Carolyn Mason, Duty Manager


Welcome to our new blog series: Staff Spotlight. This is where you’ll meet the people who make it happen!
With over 400 associates working at Pan Pacific Vancouver, there are a lot of personalities and a lot of stories to tell! So let’s get started with our first staff profile, one of the first people you’ll meet upon arrival – Carolyn Mason, Duty Manager!
Tell us about yourself.
Born and raised here in Vancouver and reside on the North Shore. Have travelled extensively through Europe and lived in Australia for one year. I have been married for 28 years and have two daughters who are currently both in university. My husband and I own and operate a very successful restaurant in West Vancouver called Carmelo’s. I’m also an avide swimmer and swim five days a week.
How long have you been with Pan Pacific Vancouver?
I began my career with the Pan pre-opening in November 1985 as a Front Office Supervisor, but left for a year in 1987 to live and work in Australia. I returned in 1988 in corporate sales and returned to the front office a year later as Front Office Manager.
What’s a typical day at work like?
The wonderful thing is there isn’t a “typical day” and this is why I have been working here so long! Of course, there are specific daily duties, but everyday you’re meeting guests from all over the world, being an ambassador for the hotel and the city.
In the front office, you are constantly working with all the different departments – with one common goal – exceeding expectations and extending personalized service. You are also constantly “on stage and setting the pace. A positive attitude goes a long way!
What’s your favourite part about your job?
The people I work with. I can honestly say the associates in the hotel are the most dedicated, caring, and hardworking group of individuals. I also thoroughly enjoy the interaction with our guests and do my very best to extend personalized service to them.
What are the most challenging aspects about your job?
Keeping up with ever-changing technology. Keeping the team motivated and challenged.
Any special moment you want to share with us?
Oh – there have been so many! I was involved with the meet and greet of Prince Charles and Lady Diana and was manning the elevator. I was given clear instructions to not speak unless spoke to. Prince Charles asked me how my day was and Lady Diana, upon exiting the elevator looked at my name tag and thanked me personally! The next day I was again manning the elevator for them and Lady Diana greeted me by name, without looking at my name tag. She had such a presence and warmth – there was nothing pompous about her. There were here during Expo in 1986.
What is the strangest thing you’ve encountered?
There was a guest who truly believed her room was haunted by her ex-husband! She asked that I come to her room and ask him to please leave.
What is the most frequent request that you receive from guests?
That’s easy – “A room with a view please.”
Favourite celebrity who stayed at the Pan Pacific Vancouver? And have you ever been starstruck?
I have to say three celebrities.
Sean Connery – he was such a gentleman! He stayed with us for two months while filming in Vancouver. During his stay he had some changes to his reservation. Instead of having his assistant take care of these changes, he made his own way down to our reservation department and made the changes in person with our reservation manager. After that, he would sometimes just walk into the reservation department just to say hello!
Robin Williams also stayed with us for a few months and would exit and enter the hotel via our staff elevator. Once, instead of going directly up to his room, he took a turn and went into our staff cafeteria and started an improv comedy act. He was absolutely hilarious!
Last but not least, Jack Nicholson. Oh my! He is exactly how you would imagine him to be. He called to advise us that he couldn’t figure out how to use the stereo in his suite. When I went up to assist, he answered the door wearing his famed dark glasses, smoking a cigar and acted just like one would imagine. I was completely star-struck!
Last question! What do you like to do for fun when you’re not working?
My husband and I are avid travellers and I’m fortunate to have been to many countries – my favourite being Italy. My favourite region is Northern Italy. I prefer the smaller towns over the larger cities – my favourite place being Verona.  I have travelled Italy extensively (over 30 times!) and am passionate about the country, the people and of course, the food!

Let Us Entertain You

37th Vancouver Pride Parade - Robson and Thurlow Streets (starting point)

Attracting crowds of more than 650,000, the Pride Parade is renowned on the international stage as one of the largest and most successful LGBTQ events in the world.
