Promotion: Wine + Cheese Pairing at Cafe Pacifica


A pairing that is as classic, as it is delectable!
The Cafe Pacifica has introduced new port and cheese pairings featuring Fonseca Bin No. 27 and Fonseca “Guimaraens” 2005, Cambozola and Jersey Blue cheese.
Cambozola is a triple cream, brie-style blue cheese made from pasteurised cow’s milk in the German region of Allgäu.
The Jersey Blue is a handcrafted artisan cheese from Golden Ears Cheese Works in Maple Ridge. This cheese will knock one’s socks off and will have you begging for another bite. It’s especially tasty when paired with a sweet pastry or a heavy tenderloin.
For our latest promotion, Cafe Pacifica will be serving one oz of each port and an oz of each cheese, along with a dark chocolate disc with salt and red peppercorns. This promotion finishes at the end of November, so make sure to partake and enjoy!

The GLOW Gala


On Saturday, October 17, it was our honour to be the venue sponsor for the BC Women’s Hospital and Health Centre Foundation’s GLOW Gala, benefiting their Newborn ICU.
The inaugural event was emcee’d by CTV news anchors Tamara Taggart and Mike Killeen, with a special guest performance by singer-songwriter, Sarah McLachlan.
The sold out gala took place in the Crystal Pavilion Ballroom, which was decorated with white sheer wall coverings, white linens and chiavari chairs, hurricane candleholders and a beautiful floral centrepiece on each table.


Such ambience set the mood for a delicious dinner, starting with Chef Bob Wiles’ Chardonnay poached lobster salad with organic baby beets and avocado green godess, followed by Alberta grain fed beef tenderloin with golden potato mille feuille, roasted celeriac and baby yams, Okanagan cherry compote and meritage jus.
And of course, we can’t forget the dessert! Guests enjoyed crunchy chocolate mousse, garnished with crisp pineapple flower, Matcha dusted meringue filled with lemon curd and coconut cream and garnished with fresh fruit.


Guests generously took part in the silent and almost live auctions, as well as the wine pull. By the end of the night, $1.2 million dollars was raised for the BC Women’s Newborn ICU! Money raised will go towards next generation, start-of-the-art neonatal technologies.




What an incredible night! Pan Pacific Vancouver was proud to be a part of such an amazing fundraiser.

Chef Bob Wiles’ Chardonnay Poached Lobster Salad


We are proud to be a sponsor of this weekend’s GLOW Gala, benefiting BC Women’s Hospital Newborn ICU and to promote this worthwhile event, Chef Bob Wiles appeared onCTV Noon Hour News to showcase his delicious poached lobster salad, which will be served at the gala.
Now you can bring a little taste of Pan Pacific Vancouver to your dinner table with Chef’s very own recipe!
Here’s how:
Break the Chardonnay poached lobster salad with organic baby beets and avocado green goddess into 3 components: Green goddess puree, court-bouillon for cooking lobster and last but not least, assembling the salad.
But first, gather the main ingredients together:
1 lb fresh whole lobster
9 pieces small baby red beet
6 slices sliced baby candy cane beets
3 slices acorn squash
30 grams fresh corn kernels
3 grams rice crackers balls
9 pieces sorrel leaf
9 pieces nastium leafs
30 ml lemon olive oil dressing
Part I -Instructions for green goddess puree
Assemble the following ingredients:
5 grams cilantro
5 grams parsley
3 grams mint
10 grams basil
3 grams tarragon
2 grams garlic
1 avocado
1 filet anchovies (canned)
juice of 1/2 lemon
salt to taste
1. Place all of the herbs of the green goddess in a food processor
2. Blend until smooth (do not blend too long as this will make the green goddess darker)
3. Place in bowl and put in the fridge. This will keep for up to 3 days.
Part II – Court-bouillon
Assemble the following ingredients:

1 piece diced onion
2 stocks diced celery
1 piece diced carrot
1/2 piece lemon juice
250 ml Chardonnay
4 litre water
2 bay leaves
10 peppercorns
1. Place all vegetables and water in large pot and bring to a boil. Simmer for 20 minutes.
2. Strain out vegetables and bring liquid back to a boil. Add lobster and cook for 10 minutes.
3. Remove lobster from liquid and cool in ice bath. Once cold, remove from water ad place lobster in fridge.
4. Steam the baby red beets until cooked an remove skin on the bets. Let cool and put in the fridge. Mix with a little lemon olive oil dressing.
5. Sear corn on the cob and acorn squash on BBQ until it’s a nice, brown colour.
6. Remove kernels from cob with a sharp knife. Place in a small bowl and put in the fridge.
7. Place acorn squash in fridge as well.
8. Take cold lobster from fridge and remove meat from the shell. Cut lobster into nice sized pieces.
Part III – Assemble the salad
1. Spread about 25 grams of green goddess down the centre of the plate.
2. Arrange lobster, beets and grilled acorn squash nicely on top of the green goddess.
3. Sprinkle corn kernels and rice cracker balls around plate
4. Garnish with sorrel and nastium leaves and serve. Makes 3 portions.

GLOW Gala at the Pan Pacific Vancouver


On Saturday, October 17, BC Women’s Hospital will be hosting their annual GLOW Gala, benefiting the newborn ICU and we at Pan Pacific are honoured to be the venue sponsor.
The gala will be hosted by Sarah McLachlan, one of the most celebrated singer songwriters and eight-time Juno Award winner and a three-time Grammy Award winner. Funds raised will be invested in the next generation of state-of-the-art neonatal technologies, including advanced incubators, cardio-respiratory monitors, specialized transport incubators and emergency transport equipment.

Summer may be over, but that doesn’t mean that there isn’t a ton of things to do in Vancouver in the fall. If anything, it feels like it’s ramping up to end of the year holiday festivities. Christmas is just over 2 months away! (Gasp!)

The Festival is a celebration of story, told by authors, poets, spoken word performers, and graphic novelists. Maestro Bramwell Tovey conducts a fascinating concert of wide-ranging repertoire. American pianist Anne-Marie McDermott performs one of the most famous works in all of repertoire for piano, Rachmaninoff’s beautiful Rhapsody on a Theme of Paganini. Following the theme of piano variations, Ms. McDermott will also perform Dutch composer Poul Ruders’ take on Paganini’s 24th Caprice for solo violin.

When Hollywood Royalty Came To Town


It’s Throwback Thursday! Or #TBT if you prefer. Last month we opened up our archival signature book and shared some of the world’s royalty who had graced us with their presence at the hotel.
Although she’s was not king and queen royalty, she was revered as Hollywood royalty. In 1996, we had the honour of welcoming screen legend, Oscar winner and AIDS activist, Dame Elizabeth Taylor to Pan Pacific Vancouver. A Hollywood star visiting Hollywood North!

Events and Entertainment Around Town (Halloween Edition)


October in Vancouver means the Vancouver Writers Fest, the return of Cirque du Soleil and a whole whack of Halloween festivities! So whether you prefer your activities literarily, acrobatically or just downright spine-chillingly, we’ve put together a handy list of all the spooky (and not so spooky) upcoming events and entertainment. So get on out there, but keep those eyes open for ghosts and ghoulies!
Forbidden Vancouver Presents: Lost Souls of Gastown – Cathedral Square

Vancouver Police Museum Presents Movies in the Morgue – Halloween Edition

The Vancouver Halloween Parade is a family-friendly event with marching bands, music, dances, performances, horses, vehicles and floats. It’s all part of the Vancouver Halloween Expo and the time when supernaturals and superheroes from films, comics, anime and games come alive! The Expo will take place from October 15-18.
Chinatown Haunted House – Dr Sun-Yat Sen Classical Chinese Garden

The Classical Chinese Garden is transformed into a terrifying Haunted House. Featuring over 25 actors, dancers and musicians, this one-of-a-kind experience is inspired by the gruesome stories of Judge Dee: China’s Sherlock Holmes.

Come and explore the Village in the Dark of Night! See you for some ghoulishly good times! The Village, the Farmhouse and the carousel will all be adorned in a spooky but friendly fashion. Look for black cats, big yellow moons, orange pumpkins AND things that go BOO!
A Halloween Spectacular – Orpheum Theatre

The new season’s VSO Pops series gets off to a thrilling start, with a concert guaranteed to send chills up your spine. Thrill to Mussorgsky’s Night on Bald Mountain, Saint-Saens’ Danse macabre, selections from Andrew Lloyd Webber’s Phantom of the Opera, Grieg’s classic In the Hall of the Mountain King, a suite of music from Harry Potter and much more.
